Pan Fried Gnocchi with Basil Pesto recipe

This easy midweek dish takes just 10 minutes to prepare - fast food at its tastiest! Serve with a sprinkle of freshly torn basil leaves and some freshly grated parmesan cheese.


  • 450g fresh potato gnocchi
  • 1 tbsp. oil and 1 tbsp. butter
  • 2 large handfuls freshly picked basil leaves
  • 125g freshly grated parmesan cheese
  • 125ml extra-virgin olive oil
  • 60g pine nuts
  • 2 garlic cloves
  • Salt and pepper


  1. Combine basil, parmesan, pine nuts and garlic cloves in a food processor. Whiz until processed and then slowly pour in the oil, keeping the machine running, until combined. Season with salt and pepper to taste.

  2. Bring a pan of salted water to the boil. Add gnocchi and cook according to packet instructions. Drain. Heat oil and butter in a frying pan and add the drained gnocchi. Fry for 3-4 minutes, then turn over and fry for another 3 minutes. Toss with the pesto to serve.

If you want to, sprinkle the gnocchi with a few pine nuts for a bit of extra crunch and texture. Recipe serves 2-4.
