Cheesy Pesto Gnocchi Gratin recipe

This rich and cheesy gnocchi dish is brightened up with a quick, homemade, fresh pesto. Serve as a simple supper or for your dinner with a fillet of cooked cod or chicken.

  • 250g ready-made gnocchi, cooked
  • 100ml double cream
  • 50g finely grated cheddar cheese
  • 25g grated parmesan cheese
  • 1/2 tsp. Dijon mustard
  • 50g fresh basil
  • 50g toasted pine nuts
  • 25g parmesan cheese, grated
  • 1 garlic clove
  • 4 tbsp. extra-virgin olive oil
  • Salt and pepper to taste

  1. Combine cream, cheddar cheese, parmesan cheese and mustard in a small saucepan. Simmer over a low heat for 1 minute then season with salt and pepper. Stir in the gnocchi and spread in a baking dish. Grill under a hot grill for a minute or so until the top of the gratin turns brown.

  2. Make the pesto. Combine basil, pine nuts, parmesan, garlic and oil in a food processor. Season to taste, then drizzle over the cooked gratin. Serve immediately.

If you like, add a little parsley to the pesto for a different flavour. Recipe serves 2.
