Gnocchi in Fontina Sauce recipe

This decadent Italian inspired dish is perfect for serving as a starter, and if you're feeling naughty, as a main course at a long Italian-inspired dinner party. The sauce is simple, but it gets plenty of flavour from the Fontina.


  • 500g gnocchi
  • 225g Fontina cheese
  • 75g grated Parmesan cheese
  • 6 tbsp. butter
  • 3-4 shallots, chopped finely
  • 75ml double cream
  • 1 tbsp. freshly chopped basil
  • Salt and pepper


  1. Bring a pot of water to the boil. Put the gnocchi on to cook, then start the sauce.

  2. Melt the butter in a frying pan and add the shallots. Cook them for a couple of minutes or until tender, then add the cream and heat until just boiling, then stir in the cheeses. Don't let the sauce boil and keep stirring until the cheese melts, then season with salt and pepper and the chopped basil.

  3. When the gnocchi floats at the top of the water, it's ready, so drain with a slotted spoon and put into the sauce frying pan. Stir to cover then serve.

You can make this a little more English-inspired by using Stilton and soft cream cheese in place of the Italian cheeses in this recipe. This recipe serves four.
