Gnocchi with Mediterranean Tomato Sauce recipe

Sometimes, all you want for dinner is something quick and singing with flavour - and this zingy Mediterranean tomato sauce is perfect for pairing with creamy gnocchi or even the pasta of your choice.

Ingredients:

  • 400g tin chopped tomatoes
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp. balsamic vinegar
  • Pinch sugar
  • Salt and pepper
  • 1 tsp. mixed Italian dried herbs
  • Oil
  • 2 tbsp. red pesto
  • 500g gnocchi

Directions:

  1. Finely chop the onion and crush the garlic cloves.

  2. Heat the oil and cook the onion until softened, then add the garlic and the tomatoes. Stir together, then add the sugar, vinegar and herbs, then season well. Simmer for ten minutes until thickened, then add the pesto.

  3. When the sauce is nearly cooked, put the gnocchi into a pot of boiling salted water. When it rises to the top, remove it from the pan with a slotted spoon and stir into the tomato sauce. Serve.

If you'd like, serve this gnocchi with some chopped pine nuts and some freshly chopped parsley sprinkled over the top. This recipe serves four.
