Milk Gnocchi with Raspberry Coulis recipe

This is a delicious way to serve our simple milk and vanilla gnocchi. Gnocchi is cooked, then tossed with a sweet raspberry coulis lightened with lemon juice and flavoured with fresh mint. Perfect summer food.


  • 1 x quantity milk gnocchi recipe
  • 250g fresh or frozen raspberries (if frozen defrost before use)
  • Lemon juice to taste
  • 1/2 tbsp. freshly chopped mint leaves (or more to taste)
  • 4 tbsp. caster sugar (or more to taste)


  1. Stack the gnocchi on a baking dish and dot with butter. Bake for 5-10 minutes in a 180C oven.

  2. Meanwhile, whiz the raspberries until smooth in a food processor with the lemon juice. Pass through a sieve.

  3. Mix the mint and sugar into the raspberry mixture, adding more or less to taste. Once the gnocchi has cooled slightly, toss with the raspberry coulis then serve.

Serve with a dollop of clotted cream to give this Italian dish an English twist. Recipe serves 4.
