Gnocchi with Zingy Lemon Chive Pesto recipe

Creamy gnocchi pair wonderfully with bright, zingy flavours, and so plain potato gnocchi work brilliantly with this simple lemon, garlic and chive pesto. Add a few sliced courgettes and onions if you want to up the veg content, or leave it as it is.

  • 500g gnocchi
  • Small bunch parsley
  • Small bunch chives
  • 1 garlic clove
  • Zest and juice of one lemon
  • 2 tbsp. toasted pine nuts
  • 2 tbsp. grated Parmesan cheese
  • 4 tbsp. extra-virgin olive oil

  1. Put the parsley, chives, garlic, pine nuts and cheese into a processor and whiz until coarsely chopped. Stir in the olive oil, then stir in the lemon juice just before serving.

  2. Boil the gnocchi in boiling salted water until it rises to the top of the pot, then toss in the freshly made pesto.

Add extra garlic to the pesto if you like, or try experimenting with different herbs such as chervil or coriander. This recipe serves four.
