Gnocchi with Sweet Balsamic Sauce recipe

Balsamic vinegar is a really fantastic ingredient - bags of flavour, it is sweet and sticky and is a brilliantly versatile ingredient. This gnocchi with a sweet balsamic sauce has few ingredients, but your guests will think you've been slaving in the kitchen all day!


  • 450g gnocchi (use sweet potato for a sweeter flavour, or stick to a regular gnocchi)
  • 125ml balsamic vinegar
  • 1 small sweet onion
  • 100g mushrooms
  • 50g butter, softened
  • 1 garlic clove
  • 3 tbsp. chopped mixed fresh herbs
  • Salt and pepper


  1. Finely chop the onion and mushrooms.

  2. Mince the garlic clove and stir into the softened butter with the herbs. Mould into a sausage shape and put back into the fridge until you're ready to use it.

  3. Heat the vinegar in a saucepan over a high heat. Bring to the boil then reduce to a low simmer and reduce by half - this will take 9-10 minutes. Meanwhile, heat 1/3 of the herb butter and cook the onion and mushrooms until softened and golden.

  4. Cook the gnocchi according to packet instructions, then drain. Add to the pan with the veggies, then add the balsamic reduction. Stir in the rest of the butter. Once melted, serve immediately.

If you like, add a fresh pepper or try adding a chilli for a chilli jam type flavour. Recipe serves 2.
