Gnocchi with a Tomato and Spinach Sauce recipe

Gnocchi can be a heavy dish so when it is paired with a light and fresh tomato sauce, it's a perfect supper or lunch. Tomatoes combine with spinach and herbs to create a quick and simple meal perfect for serving up when the kids come home from school.


  • 750g gnocchi
  • 500g ricotta, crumbled
  • 400g tin of chopped tomatoes
  • 3 shallots
  • 3 cloves of garlic
  • 100g fresh spinach
  • Salt and pepper
  • 2 tbsp. oil


  1. Finely dice the shallots and mince the garlic cloves. Heat the oil in a frying pan and cook the shallots for 2-3 minutes until tender. Add the garlic, cook for one more minute and then add the tomatoes. Season well, then simmer for twenty minutes or until thickened.

  2. Stir the spinach into the sauce until wilted. Meanwhile, whilst the sauce is cooking, get the gnocchi onto cook in a pot of boiling salted water. When they float to the top, they're ready.

  3. To serve, toss the gnocchi with the tomato sauce and the riccota.

You could omit the ricotta and use something such as mascarpone or mozzarella instead, depending on your preferences. Add herbs to the sauce if you want to. This recipe serves six.
